Our Great Complete Cocido Madrileño is composed of the following ingredients:
We start with Kindness. We consider ourselves hosts, we have been lucky that you have decided to visit us and our wish is that you feel well cared for, in a familiar and relaxed atmosphere.
First, we offer you some olives from Campo Real, the tastiest olives in Madrid.
After a few minutes we give way to the different changes:
First overturn, or “Vuelco”: Noodle soup accompanied by chillies and chives. On all occasions, leaving the soup tureen in the center of the table so that each diner can repeat the soup as much as they want, since it is always very low in fat to avoid a feeling of satiety.
Second overturn, segundo vuelco, our famous tray which has been delighting lovers of good food since 1942. In it you will find the best presented and most complete Cocido Madrileño (A total of 15 ingredients make it up):
- Select Castellano Chickpeas and Fresh Vegetables (Galician Potato, Cabbage, Red Pepper and Carrot)
- Artisan black pudding with Asturian onion and a smoked homemade Asturian chorizo “to repeat”
- White Iberian bacon, fresh streaky Iberian bacon, Duroc pork ribs and ham hock
- Special yearling beef and free-range chicken
- Cane bones with their marrow
- Madrid ball “Gran Tasca”
All seasoned to the taste of each diner with virgin olive oil or a natural tomato sauce with cumin and accompanied by freshly baked rustic bread.
We are faced with one of the most complete Spanish stews on a nutritional level and the most laborious in terms of elaboration and preparation times.
